Made by Peter Dixon of Parish Hill Creamery in West Westminster VT.

He says it best - “ Traditional, two-curd Gorgonzola.  West West Gorg is made with whole, raw milk from Elm Lea Farm.  The edible rind surrounds a dense paste with streaks of blue mold, a creamy texture and a spicy, earthy flavor. “    

Made only when the cows up the road are at pasture and the wheels are aged (this batch for a year+) in his hillside cave.
